I call this sauce ‘Classic’ since I find it the easiest to make with the best flavours from my various sauces with feta.
The Feta is both hearty and Umami, the yoghurt provides the creaminess while the lemon juice and zest give another level tangy flavour.
Try it with minced meat like beef, pork or chicken burgers/patties, next to kebab of all kinds of meats and why not as a salad dressing.

Classic Feta Sauce
Ingredients
- 150g Feta Cheese , Charalambides-Christis, cut in pieces, not crumbled
- 50g Straggato Authentic Yoghurt , Charalambides-Christis
- 70ml Fresh Milk 3% fat , Charalambides-Christis
- 1 tbsp olive oil
- 1 tsp Lemon juice
- 1 tbsp Lemon Zest
Instructions
- Add all the ingredients in a blender, mixing well but not as a fine cream. Keep refrigerated.
