Spinach & Feta Pies

You may ask yourself why go into the trouble of cooking your own pies when you can get pies from the local bakery.
Well, with all due respect to the bakeries, there is nothing like homemade pies, with the freshest ingredients, enjoyed right out of the oven.
Give it a try! Pretty easy.

Spinach & Feta Pies

Ingredients

  • 4 sheets Traditional Pastry , Xrysi Zymi, Village
  • 250 gr Feta , cut in cubes, Charalambides-Christis
  • 20 ml olive oil , plus more for brushing
  • 1 small Yellow Onion , finely minced
  • 1 teaspoon Aleppo Pepper
  • 100 gr Spinach leaves , Barba Stathis, Organic Crops

Instructions

  • We make the filling by adding to the spinach the onions, Aleppo peppers and oil along with the feta and combining well. Keep aside.
  • Place a pastry sheet on a working board and cut in a large circle, about 30 cm. Add in the middle 3 tablespoons of the filling, flattening it but staying within the middle of the sheet. Take the top and bottom end of the round sheet and bring them together, repeating the process for the left and right ends while making sure that they seal well. Repeat the procedure for the other 3 sheets.
  • Place a large sauté pan on high heat and lightly brush the top side of the pies with oil. Place in the pan one by one and cook for 3 minutes aiming for a light golden color. While cooking in the pan, lightly brush the top side with oil and flip over while cooking for further 3 minutes. Repeat the process for the remaining 3 pies.
  • Place on a cutting board and cut in wedges.
