A true representation of LADERA! Don’t worry about the levels of oil in this dish as they will only work as a vehicle in cooking and mellowing the beans and the tomatoes. Of course, provided you don’t grasp a loaf of bread and start dipping into the dish.
Anyhow, an everyday dish enjoyed by the whole family that is reminiscent of grandmas cooking.

Fasolakia Yiahni (String Beans Stew)
Servings: 8 People
Ingredients
- 850g String Beans , Barba Stathis, frozen
- 80ml EVOO , Extra Virgin Olive Oil
- 1 medium Yellow Onion , finely chopped
- 1 Large clove Garlic , finely minced
- 15 Cherry Tomatoes
- 2 Potatoes , peeled and cut into large chunks
- 250ml Tomato Passata
- ½ tsp Chili flakes
- ½ tsp Sugar
- 1 tsp Cumin
- 1 tsp Dry Oregano
- 1 tsp dry Mint
- ½ cup fresh Parsley , finely chopped
- 1 tsp Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Take a large pot or casserole and place on medium heat. Let it heat up for a minute, pour half the oil and a minute later add the onions. Sauté the onions until a bit translucent, add the garlic and sauté for 30 seconds until fragrant.
- Add the beans, potatoes, cherry tomatoes, tomato passata, cumin, oregano, chili flakes, sugar, mint and season with the salt and pepper. Pour water to the level, give it a good stir increase the heat and bring it to a boil.
- Place the lid without closing tightly and simmer for 45 minutes. 5 minutes before the end add most of the parsley and the remaining olive oil.
- Serve and garnish with more parsley and accompany with Feta.
