Sweet potatoes don’t need much of an introduction but when fried and tossed with coriander, paprika, salt and pepper then their flavour is elevated to another level.
Must be cut really thin and cooked until the get a nice light golden colour.

Sweet Potato Chips
Ingredients
- 2 Sweet Potatoes , washed well but not peeled, paper thin sliced (use a mandolin)
- Corn or peanut oil for the frying
- 1½ tsp Sweet Smoked Paprika
- 1½ tsp Coriander , ground
- 1½ tsp Sea Salt
- ¼ tsp Cayenne Pepper , or Chilli Pepper, optional
- ½ freshly ground Black Pepper
Instructions
- Make the spice mix by combining the paprika, coriander, cayenne pepper (of using), salt and black pepper.
- Set a deep fryer or a medium to large frying pot over high heat, if you have a thermometer try to reach 190°C.
- Fry them in batches taking care not to brown them a lot. Remove the fried chips either with the fryer’s basket or with a metal slotted spoon and drain on kitchen paper towels (just leave them in the fryers basket if using one.)
- Serve in a deep bowl and sprinkle them with the spice mix.
