Super Fresh Aegean Shrimps cooked with simple ingredients to elevate their own flavors. Served with some green beans and of course enjoyed with a glass of Ouzo.
The light color ones are shrimps from Cyprus that my fishmonger insisted to try. (very good but not as good as the Aegean ones)

Aegean Shrimps
Servings: 4 People
Ingredients
- 1 kg Fresh Aegean Shrimps , deveined but not peeled and heads-on
- 25 ml Lemon juice
- 4 tablespoons EVOO , Extra Virgin Olive Oil
- 50 ml dry White Wine
- ½ teaspoon Dry Oregano
- 1 tablespoon fresh Parsley , finely chopped
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- Ask your kind fishmonger to devein the shrimps.
- Place all the ingredients, except the shrimps, into a large bowl and whisk to create a marinade. Then add the shrimps and toss gently. Allow for the marinade to infuse the shrimps for about 30 minutes.
- In the meantime, turn the oven to 250° C, broiler/griller on and rack place to the top position.
- Take a large no-stick oven proof pan and add the shrimps. Place in the oven and cook for about 2 minutes and until slightly charred. Remove from the oven, turn them on their other side, brush with the remaining marinade and cook for further 90 seconds.
- Serve in a flat plate and sprinkle the parsley.
