While a Simple Spanish tapas dish, Pan con Tomatillo, I chose to give it a Greek twist with the use of Oregano. Do take the time to drain the grated tomatoes as it gives a nice texture to the sauce in combination with the crunch toasted bread.
You can also use a rustic bread instead of the baguette. Sauce can be fridge stored for couple of days.

- 2 tablespoons Chives , very finely chopped
- 40 ml EVOO , Extra Virgin Olive Oil
- 1 tablespoon Dry Oregano
- 2 teaspoons coarse Sea Salt
- 1 loaf French Baguette bread , sliced to ¾ cm thickness
