For those not familiar, or should I say, ‘never heard of’, Trahanas Soup with Halloumi, Trahanas is made of cracked wheat and fermented goat milk curd. Sundried to turn sour that gives a comforting soup in the winter months, while at the same time is nutritious and hearty!
Trahanas Soup with Halloumi
Halloumi can also be added, I always do so, for an even tastier soup.

Trahanas Soup
Servings: 10 People
Ingredients
- 500g Trahana
- 2200ml Water , or optionally 2 cubes Chicken Bouillon diluted in it.
- 1 Haloumi Cheese , cut in cubes
- 1 tbsp Sea Salt
- ½ tsp freshly ground Black Pepper
- 2 tbsp Lemon juice , optional
Instructions
- 4 hours before cooking the soup place the trahana in a bowl and cover with water to soften, about 2000ml, extra from the water used in the cooking.
- Set a large pot over high heat, add the water/broth and bring to a boil. Add the softened trahana with its water, bring again to a boil and simmer with the lid on for about 25 minutes and until cooked while stirring occasionally. Lightly fry the Halloumi and add in the pot along with the salt and pepper. Cook for further 5 minutes. Taste and pour the lemon juice if needed and serve.
