Roots Salad
Servings: 8 People
Ingredients
For the salad:
- 3 Parsnips , grated as matchsticks
- 6 Beetroots , grated as matchsticks
- 3 Carrots , grated as matchsticks
- ½ Cabbage , grated
- ½ cup unsalted Pistachios , toasted roughly chopped
- ½ cup Coriander , leaves picked
- 1 ½ teaspoon Sea Salt
- 1 teaspoon freshly ground Black Pepper
For the dressing:
- 5 tablespoons EVOO , Extra Virgin Olive Oil
- 5 tablespoons Rose water
- 1 tablespoon Honey
- 1 Lemon Zest
- 4 tablespoons Lemon juice
- 1 tablespoon Cumin seeds , grounded
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- In a medium size bowl whisk all the dressing ingredients.
- Put in the bowl the salad ingredients (half the coriander and half the pistachios) pour the dressing and toss. Top with the remaining coriander and pistachios.
