The famous Greek yogurt salad, Tzatziki, often served as a meze or accompanying other dishes like souvlaki and gyro. Undoubtedly it should be garlicky but if you are not so fond of the raw taste of garlic you can either use couple of tablespoons of garlic infused Olive Oil or omit it altogether.

Servings: 8 People
Ingredients
- 400 grs Greek Yogurt , Strained
- 2 medium Cucumbers , unpeeled
- 1 clove Garlic
- 2 tablespoons EVOO , Extra Virgin Olive Oil
- 3 tablespoons White Vinegar , preferable Sauvignon Blanc
- 2 tablespoons fresh Mint , home grown, leaves picked and finely chopped
- pinch Sea Salt
Instructions
- Grate the cucumbers and place in a bowl with a kitchen towel in it along with a pinch of salt for the cucumbers water to be released. Leave for 30 minutes and then squeeze in your hand to get rid of the remaining water. Keep aside.
- Chop the garlic and add it in a mortar along with 1 tablespoon of oil and a pinch of salt. Work it to a paste.
- Place the yogurt in the serving bowl, add the cucumbers, garlic and vinegar and we mix well. Taste and adjust both saltiness and acidity to your liking.
- Add the Chopped mint and chill before serving.
