Okra, better known as ladies’ fingers or Bamyes in our part of the world. A high fibre vegetable that is known for its high soluble and insoluble fiber content. Goes nicely with Greek yogurt.

Ingredients
- 1000 grs Okra , head with stem cut as well as tip
- 2 tablespoons EVOO , (Extra Virgin Olive Oil)
- 1 small Yellow Onion , finely chopped
- 1 clove Garlic , chopped
- 500 ml Water , hot
- 60 ml tomato paste
- 1 teaspoon Chili flakes , crushed
- 1 teaspoon Smoked Paprika
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- Whisk and dilute in the hot water the tomato paste, salt, chilli flakes and smoked paprika.

- Add the Okra and stir. Add the diluted tomato paste, bring to a boil, reduce the heat and cover with the saucepans’ lid keeping a small vent at the rim of the pan. Cook for about 20 minutes stirring every 5 minutes until juices have been absorbed and evaporated and a nice sauce is left.
