Okra, better known as ladies’ fingers or Bamyes in our part of the world. A high fibre vegetable that is known for its high soluble and insoluble fiber content. Goes nicely with Greek yogurt.

Ingredients

  • 1000 grs Okra , head with stem cut as well as tip
  • 2 tablespoons EVOO , (Extra Virgin Olive Oil)
  • 1 small Yellow Onion , finely chopped
  • 1 clove Garlic , chopped
  • 500 ml Water , hot
  • 60 ml tomato paste
  • 1 teaspoon Chili flakes , crushed
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Sea Salt
  • ½ teaspoon freshly ground Black Pepper

Instructions

  • Whisk and dilute in the hot water the tomato paste, salt, chilli flakes and smoked paprika.

  • Add the Okra and stir. Add the diluted tomato paste, bring to a boil, reduce the heat and cover with the saucepans’ lid keeping a small vent at the rim of the pan. Cook for about 20 minutes stirring every 5 minutes until juices have been absorbed and evaporated and a nice sauce is left.
