Often called ‘the poor mans fish’! I really don’t mind as these fresh fish are so tasty, in a very different way than other fish. Serve with Oven baked chips!
Sardines in the oven with Herbs and spices
Servings: 4 People
Ingredients
- 1 kg Sardines , scaled and gutted by your friendly fishmonger
- 3 tablespoons Lemon juice
- 1 teaspoon Chili flakes , crushed
- 2 teaspoons Dry Oregano , grinded
- 2 teaspoons dry Fennel Seeds , grinded
- 1 clove Garlic , sliced
- 4 tablespoons fresh Parsley , finely chopped
- 50 ml dry White Wine
- 100 ml EVOO , (Extra Virgin Olive Oil)
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- Turn on the oven to 210 degrees C., air circulation and rack in the middle.
- Put in a medium bowl 60 ml of your oil and half the parsley with the rest of the ingredients, except the wine. Add in the bowl the sardines and mix well.
- Use a non-stick baking dish and pour the remaining oil and wine. Then line up the sardines in the dish and cook for about 20 minutes.
- Serve and garnish with the remaining parsley and drizzle with some olive oil.
