Simple to make sauce that goes nicely with shrimps or any fish as well as with spinach salad.

Ingredients

  • 3 red Bell Peppers , deseeded and cut in chunks
  • 3 tablespoons EVOO , (Extra Virgin Olive Oil)
  • ½ clove cloves garlic, crushed , peeled and finely chopped
  • 1 Shallot , finely chopped
  • 50 ml White Dry Wine
  • 50 ml Water , warm
  • ½ teaspoon Sea Salt
  • ¼ teaspoon freshly ground Black Pepper

Instructions

  • In a small saucepan on medium heat add the oil and wait for a minute to heat up. Add the shallots and the garlic and sauté for 2 minutes stirring frequently.
  • Add the peppers and continue sauteing for 2-3 minutes. Deglaze with the wine and wait for 2 minutes for the alcohol to evaporate.
  • Reduce the heat and add the water, simmer until absorbed and peppers are soft.
  • Place the above in a high-speed blender and blend until smooth. Pass through a fine sieve and serve.
