Instead of the traditional tomatoes I like to use peaches for my BBQ sauce as you can achieve a nicer, richer, fruity texture. Can be used on brisket, pulled pork and ribs.

Whiskey & Peach BBQ Sauce
Ingredients
- 1 small Yellow Onion , chopped
- 500 grs canned tomatoes , smashed and chopped
- 80 ml Cider Vinegar , preferably apple
- 180 ml Water
- 100 ml American Whiskey , Bourbon type
- 40 grs Unsalted Butter
- 1 tablespoon Dijon Mustard
- 100 grs Dark Brown Sugar
- 2 big Peaches , peeled and diced
- 2 tablespoons Worcestershire sauce
- 1 clove Garlic , minced
- 1 Red Chili , chopped and minced
- 3 tablespoons Lime juice
- 1 ½ teaspoons Sea Salt
Instructions
- In a large and deep sauce pan over medium heat add the butter and Sauté the onion with the garlic and after a minute add the mustard and stir for a minute more.
- Add the water, tomatoes, peaches and chili pepper and bring to a boil.
- Bring to a simmer on low heat and allow the liquid/water to evaporate by half.
- Toss in the rest of the ingredients and let them simmer for an hour or so with the lid on the saucepan.
- Let the sauce cool and then place it in sterilized glass jars.
