This is my ‘Red’ version of tomatillo salsa, very similar to Pico de Gallo, as I have omitted the roasted green poblano type peppers.

Tomatillo Salsa
Ingredients
- 4 Tomatoes , Fully ripened, seeded and finely chopped/diced
- ½ small Shallot , chopped/diced
- 25 ml Lime juice , (about 1 lime)
- 3 Jalapeño or green Chili Peppers , seeded and ribs removed, finely chopped (for more heat keep some of the ribs/seeds)
- ½ cup Cilantro , leaves, chopped
- 1 teaspoon Sea Salt
Instructions
- Mix together the tomatoes, onion, chili peppers, cilantro, salt and lime juice.
- Refrigerate for an hour before serving.
