My guacamole recipe a very simple twist from the classic one, the addition of tomatoes giving the result a refreshing feel! I also like not to overwork the ingredients to let the flavours each play their role and in particular the avocados having a chunkier feel.
Guacamole
Ingredients
- 4 Avocados , fully ripened, if possible use Haas variety
- 25 ml Lime juice , (about 1 lime)
- 1 small Red Onion or Shallot , finely diced
- ½ cup Cilantro , finely chopped
- 1 Jalapeño , seeded and ribs removed, finely chopped (if you want your guacamole spicy hot, keep the ribs and some seeds), or red chili pepper
- 1 small Tomato , seeded and diced in very small cubes, same size as the onion ones
- 1 teaspoon Sea Salt
Instructions
- Halve the avocados, remove the pits and scoop the flesh into a small bowl.
- Add the lime juice and mash lightly with a potato masher or a fork, keeping the avocados slightly chunky.
- Add the tomatoes, cilantro, onion, jalapeño and salt and toss without overdoing it.
- Serve with veggies like radishes, celery, cauliflower and of course plain flour tortilla chips.
