Moroccan Salad

Ingredients

For the Salad

  • 200 grs Parsnip grated
  • 200 grs Beetroot grated
  • 3 small Carrots grated
  • 2 Red Blood Oranges peeled and wedged
  • ¼ cup unsalted Pistachios toasted and crushed
  • ¼ cup Coriander leaves
  • handfull Mint leaves
  • Sea Salt
  • freshly ground Black Pepper

For the Dressing

  • 3 tablespoons EVOO (Extra Virgin Olive Oil)
  • 2 tablespoons Rose water
  • 2 teaspoons Honey
  • 1 Lemon Zest
  • 3 tablespoons Lemon juice
  • 3 tablespoons Orange juice
  • 1 teaspoon Cumin seeds toasted and crushed
  • Sea Salt
  • freshly ground Black Pepper
