Honey Glazed Carrots

Ingredients

  • 1 kg Small Carrots , peeled
  • 90 ml Runny Honey
  • 75 ml EVOO , extra virgin olive oil
  • 6-7 sprigs Fresh Thyme
  • 2 tbsp Fresh Parsley , leaves picked and chopped
  • 1 tsp Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Turn the oven on, air circulation to 190°C, rack set in the middle.
  • Take a glass bowl and add the honey, oil, salt and pepper. Mix well.
  • Take on oven proof dish and place the carrots. Then top them up with the honey mixture as well as with the thyme and toss.
  • Place in the preheated oven and cook for about 25’ and until a bit charred but of course also for the carrots to soften a bit.
  • Place in a flat dish while topping up with the parsley.
