Potato Planks

Ingredients

  • 4-5 Potatoes
  • 100 ml EVOO , Extra Virgin Olive Oil
  • 30 ml Lemon Juice
  • 2 tbsp Dijon Mustard
  • 1 tbsp Dry Coriander , ground
  • 1 tbsp Smoked Paprika , medium heat
  • 1 tsp Fine Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Mix all the ingredients except of the potatoes in a large bowl.
  • Wash and peel the potatoes, then slice them in planks of about 3-4mm thickness. Place them in the bowl with the oil mixture tossing well to get evenly coated.
  • In the meantime, turn on the oven to 190°C, air circulation, rack in the middle.
  • Use a large oven-proof baking dish, or 2 if needed. Place the planks all-over without overlapping each other. Pour on them the remaining oil mixture and cook for about 25’-30’ until nicely crispy and golden brown. Halfway through, about 20’ later, you remove from the oven and flip the planks.
