Mix all the ingredients except of the potatoes in a large bowl.
Wash and peel the potatoes, then slice them in planks of about 3-4mm thickness. Place them in the bowl with the oil mixture tossing well to get evenly coated.
In the meantime, turn on the oven to 190°C, air circulation, rack in the middle.
Use a large oven-proof baking dish, or 2 if needed. Place the planks all-over without overlapping each other. Pour on them the remaining oil mixture and cook for about 25’-30’ until nicely crispy and golden brown. Halfway through, about 20’ later, you remove from the oven and flip the planks.
