Greek Fries with Feta

Ingredients

  • 2 Potatoes , medium to large size
  • 125 g Feta , Charalambides Christis
  • 50 ml Rapeseed Oil , or corn oil
  • ½ Red Onion , finely chopped
  • 1 tbsp Dry Oregano , ground
  • 1 Tomato , seeded and cut in small cubes
  • 2 tbsp Fresh Parsley , roughly chopped
  • 1 tsp Fine Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Set the oven to 210°C, air circulation, rack in the middle.
  • Wash and peel the potatoes, then cut in strips and place them in a bowl filled with cold water for 20’ so that the excess starch is removed.
  • Take out of the water and dry them with a towel. Keep them out for 10’ to make sure that they have dried from the water.
  • Place the fries in a large bowl. Pour half the oil and add half the oregano, salt and pepper. Toss well.
  • Use an oven-proof baking dish, line it with the rest of the oil place it in the preheated oven for 10’. Remove from the oven and add the fries, making sure that they are laid evenly. Place the dish in the oven and cook for about 50’ and until the fries are golden brown.
  • Remove from the oven and place on a wooden board or a serving plate topping them with crumbles of the feta, the onion and the tomatoes. Sprinkle the remaining oregano and garnish with the parsley.
