100grsDehydrated Mushrooms, various aromatic ones to include Porcini and Cremini, grinded to powder in a coffee grinder
1tablespoonfresh Thyme, home grown, leaves only or 1 teaspoon of dry Thyme
2clovesGarlic, sliced
1tablespoonLemon juice
1teaspoonSea Salt
½teaspoonfreshly ground Black Pepper
Instructions
Add the 4 tablespoons of EVOO in a large 30 cm frying pan over super-high heat for 1-2 minute until smoking. Add the mushrooms, thyme and garlic and let sizzle and brown on one side before tossing.
Sprinkle with the mushroom powder and cook for about 5-8 minutes, tossing occasionally. Deglaze with the lemon juice to brighten the color and season with the salt and pepper.
