½clovecloves garlic, crushed, peeled and finely chopped
1Shallot, finely chopped
50mlWhite Dry Wine
50mlWater, warm
½teaspoonSea Salt
¼teaspoonfreshly ground Black Pepper
Instructions
In a small saucepan on medium heat add the oil and wait for a minute to heat up. Add the shallots and the garlic and sauté for 2 minutes stirring frequently.
Add the peppers and continue sauteing for 2-3 minutes. Deglaze with the wine and wait for 2 minutes for the alcohol to evaporate.
Reduce the heat and add the water, simmer until absorbed and peppers are soft.
Place the above in a high-speed blender and blend until smooth. Pass through a fine sieve and serve.
