1kgSardines, scaled and gutted by your friendly fishmonger
3tablespoonsLemon juice
1teaspoonChili flakes, crushed
2teaspoonsDry Oregano, grinded
2teaspoonsdry Fennel Seeds, grinded
1cloveGarlic, sliced
4tablespoonsfresh Parsley, finely chopped
50mldry White Wine
100mlEVOO, (Extra Virgin Olive Oil)
1teaspoonSea Salt
½ teaspoonfreshly ground Black Pepper
Instructions
Turn on the oven to 210 degrees C., air circulation and rack in the middle.
Put in a medium bowl 60 ml of your oil and half the parsley with the rest of the ingredients, except the wine. Add in the bowl the sardines and mix well.
Use a non-stick baking dish and pour the remaining oil and wine. Then line up the sardines in the dish and cook for about 20 minutes.
Serve and garnish with the remaining parsley and drizzle with some olive oil.
