Coleslaw without Mayo

Ingredients

  • 1 medium Purple Cabbage , shredded, inside core removed
  • ¼ medium white Cabbage , shredded, inside core removed
  • 2 Carrots , shredded sideways
  • 120 ml White Distilled Vinegar
  • 40 gr Sugar
  • 2 teaspoons Fennel Seeds , crushed
  • 1 teaspoon Sea Salt
  • ½ teaspoon freshly ground Black Pepper

Instructions

  • In a medium bowl, whisk the vinegar, sugar, fennel seeds, salt and pepper.
  • In a large bowl add the cabbages and carrots, mix well, cover and let sit for 1-4 hours. Before serving, toss and place the salad in a colander to get rid of the excess dressing and serve.
