Place a medium-large pot on medium heat. Add the water, carrots, butter, miso, lemon juice and peel, honey and salt. Stir gently and bring to a boil and then simmer for 10 minutes with the lid on.
Increase the heat to high, take the lid off and reduce to glaze while tossing frequently for 10 minutes.
Serve in a flat dish with the carrots arranged next to each other.
