Preheat the oven to 185°C, air circulation and rack set in the middle.
Take an oven proof dish and lightly brush it with some oil surface. Add the two fillets of sea bass, skin side down, and drizzle on top of them some oil and lemon juice. Sprinkle the coriander and season with salt and pepper. Place in the oven, uncovered, cooking for 18-20’.
Serve and sprinkle on top the parsley.
It can also be cooked in the gaz bbq on a cast iron plate or skillet and with indirect heat, at 190° - 200°C with the lid closed.
