Avocado Cucumber Salad

Ingredients

  • 2 Avocados
  • 3 Cucumbers
  • 1 tsp Sweet Chili Flakes
  • 1 tbsp Fresh Parsley , roughly chopped
  • ½ tsp dry Coriander , ground
  • 2 tbsp EVOO , Extra Virgin Olive Oil
  • 1 tbsp Lemon Juice
  • ½ tsp Sea Salt
  • ¼ tsp freshly ground Black Pepper

Instructions

  • Halve and scoop the avocados and then cut in small chunks.
  • Roughly peel the cucumbers, halve and scoop out their seeds. Cut in the same size of the avocado chunks.
  • Place into a bowl the avocados and cucumbers, add the coriander, chili flakes, oil and lemon juice and mix gently. Season with the salt and pepper, add the parsley and give it a final mix.
