Halve and scoop the avocados and then cut in small chunks.
Roughly peel the cucumbers, halve and scoop out their seeds. Cut in the same size of the avocado chunks.
Place into a bowl the avocados and cucumbers, add the coriander, chili flakes, oil and lemon juice and mix gently. Season with the salt and pepper, add the parsley and give it a final mix.
