Tzatziki

Ingredients

  • 400 grs Greek Yogurt , Strained
  • 2 medium Cucumbers , unpeeled
  • 1 clove Garlic
  • 2 tablespoons EVOO , Extra Virgin Olive Oil
  • 3 tablespoons White Vinegar , preferable Sauvignon Blanc
  • 2 tablespoons fresh Mint , home grown, leaves picked and finely chopped
  • pinch Sea Salt

Instructions

  • Grate the cucumbers and place in a bowl with a kitchen towel in it along with a pinch of salt for the cucumbers water to be released. Leave for 30 minutes and then squeeze in your hand to get rid of the remaining water. Keep aside.
  • Chop the garlic and add it in a mortar along with 1 tablespoon of oil and a pinch of salt. Work it to a paste.
  • Place the yogurt in the serving bowl, add the cucumbers, garlic and vinegar and we mix well. Taste and adjust both saltiness and acidity to your liking.
  • Add the Chopped mint and chill before serving.
