Instructions
Grate the cucumbers and place in a bowl with a kitchen towel in it along with a pinch of salt for the cucumbers water to be released. Leave for 30 minutes and then squeeze in your hand to get rid of the remaining water. Keep aside.
Chop the garlic and add it in a mortar along with 1 tablespoon of oil and a pinch of salt. Work it to a paste.
Place the yogurt in the serving bowl, add the cucumbers, garlic and vinegar and we mix well. Taste and adjust both saltiness and acidity to your liking.
