Whiskey & Peach BBQ Sauce

Instead of the traditional tomatoes I like to use peaches for my BBQ sauce as you can achieve a nicer, richer, fruity texture. Can be used on brisket, pulled pork and ribs.

Whiskey & Peach BBQ Sauce

Ingredients

  • 1 small Yellow Onion , chopped
  • 500 grs canned tomatoes , smashed and chopped
  • 80 ml Cider Vinegar , preferably apple
  • 180 ml Water
  • 100 ml American Whiskey , Bourbon type
  • 40 grs Unsalted Butter
  • 1 tablespoon Dijon Mustard
  • 100 grs Dark Brown Sugar
  • 2 big Peaches , peeled and diced
  • 2 tablespoons Worcestershire sauce
  • 1 clove Garlic , minced
  • 1 Red Chili , chopped and minced
  • 3 tablespoons Lime juice
  • 1 ½ teaspoons Sea Salt

Instructions

  • In a large and deep sauce pan over medium heat add the butter and Sauté the onion with the garlic and after a minute add the mustard and stir for a minute more.
  • Add the water, tomatoes, peaches and chili pepper and bring to a boil.
  • Bring to a simmer on low heat and allow the liquid/water to evaporate by half.
  • Toss in the rest of the ingredients and let them simmer for an hour or so with the lid on the saucepan.
  • Let the sauce cool and then place it in sterilized glass jars.
