Glazed Carrots with Miso and Honey

Ingredients

  • 750 gr Carrots , peeled
  • 30 gr Butter , unsalted
  • 2 tablespoons Miso paste
  • 1 Lemon , peeled
  • 1 tablespoon Honey
  • 250 ml Water
  • 50 ml Lemon juice
  • 1 ½ teaspoon Sea Salt
  • ½ teaspoon freshly ground Black Pepper

Instructions

  • Place a medium-large pot on medium heat. Add the water, carrots, butter, miso, lemon juice and peel, honey and salt. Stir gently and bring to a boil and then simmer for 10 minutes with the lid on.
  • Increase the heat to high, take the lid off and reduce to glaze while tossing frequently for 10 minutes.
  • Serve in a flat dish with the carrots arranged next to each other.
