Drunken Shrimps

Shrimps and Ouzo, what a combination but nevertheless a very common match! Make sure that they are fresh Greek shrimps, marinade them in an ouzo mixture and the bells start ringing!

Doesn’t need much, just a couple of extra ingredients such as extra virgin olive oil and oregano. No worries, three or four (ingredients) are not a crowd!

Serve with a quinoa salad that has edamame beans, sweet corn and sundried tomatoes!????

Ingredients

  • 1.4 kg fresh Shrimps , peeled and deveined, tails and heads-on
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • 60ml Ouzo
  • 1 tsp Dry Oregano
  • 1 tbsp fresh Parsley , finely chopped
  • 1 tsp Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Ask your kind fishmonger to peel and devein the shrimps.
  • Place all the ingredients, except the shrimps and parsley, into a large bowl and whisk to create a marinade. Then add the shrimps and toss gently. Allow for the marinade to infuse the shrimps for about 1 hour.
  • In the meantime, turn the oven to 250° C, broiler/griller on and rack place to the top position.
  • Take a large no-stick oven proof tin sheet and add the shrimps. Brush with the remaining marinade and place in the oven to cook for about 2 ½ minutes and until slightly charred. Remove from the oven, turn them on their side and cook for further 2 minutes.
  • Serve in a flat plate and sprinkle the parsley.
