Mayonnaise

Prep Time5 minutes

Ingredients

  • 3 Egg Yolks
  • 175 ml Natural Seed Oil , like Canola/Rapeseed or even Corn oil
  • 25 ml EVOO , Extra Virgin Olive Oil
  • 20 ml White Wine Vinegar
  • 1 tbsp Dijon Mustard , heap full
  • 1 tsp Hot Sauce like Tabasco , optional
  • ¼ tsp freshly ground White Pepper , optional
  • Pinch of Sea Salt

Instructions

  • We use a medium/large bowl and add into it all the above except of the oils.
  • Then slowly pour the olive oil while whisking for a nice emulsification followed by the seed oil. If too thin then add some more oil or if too thick then add some water. You can also make this in a small food processor where you add add into its bowl with the metal blade attached all the above except of the oils. Then while the rotor is running slowly pour the oils.
  • Another easy way is to take a tall jar and add all the ingredients. Then to place a high-speed handheld blender at the bottom of the jar and start blending, and once the bottom of the jar becomes white start slowly pulling upwards the blender. That’s it!
