Halloumi & Courgette Skewers
Servings: 2 People
Ingredients
- 1 Pissourkotiko Traditional Goat & Sheep Halloumi , Charalambides Christis, cut in strips 3×1 cm
- 2 Courgettes , thinly sliced
- 1 tbsp EVOO , Extra Virgin Olive Oil
- 4 skewers
For the sauce:
- 3 tbsp Fresh Parsley , finely chopped
- 3 tbsp EVOO , Extra Virgin Olive Oil
- 40 ml Lemon Juice
- 1 tsp Dry Mint
- ¼ tsp Fine Sea Salt
- ¼ tsp freshly ground Black Pepper
Instructions
- Make the sauce by combining all the ingredients in a bowl. Toss in the cut halloumi and make sure that every piece is covered with sauce.
- Place a sliced courgette on your bench and place 1 halloumi piece at the beginning of the courgette and fold carefully. Put it on a skewer along with 2 more, total 3.
- Add a frying pan on medium/low heat and pour the oil. A minute later place the skewers in the pan and shallow fry until nicely coloured on both sides.
- Place on a serving plate and drizzle more of the sauce.
