Chicken Kebabs

  • 1 kg Chicken Mince
  • 1 Green Long Horn Pepper , seeded and finely chopped
  • 1 Medium Onion , finely minced
  • 5 Scallions , white and green parts, finely chopped
  • 1 Cup Fresh Coriander , leaves picked and roughly chopped
  • 4 tbsp Tomato Paste
  • 1 Inch Fresh Ginger , grated (can also substitute with 2 tsp Ginger Powder)
  • 1 tsp Roasted Garlic Paste
  • 3 tbsp Yoghurt
  • 3 Egg Yolks

Spice Mixture:

  • 1 tsp Sweet Chilli Flakes , ground
  • 1 tsp Sweet Paprika , Smoked or not is up to you
  • 2 tsp Sumac
  • 2 tsp , dry Coriander, ground
  • 1 tsp Cumin , ground
  • 1 ½ tsp Fine Sea Salt
  • 1 tsp freshly cracked Black Pepper


  • We start by making the spice mixture by simply mixing everything together.
  • Add in a large bowl the chicken and mix along with the rest of the ingredients. Add the spice mixture and mix well.
  • Line the basket of an air-fryerwith parchment paper and place the formed kebabs in it. Air fry for 15’ at 190°C.Then flip the kebabs while draining any liquid from the basket and cook in the‘grill’ program of the air-fryer for 5’. Repeat for the rest of the kebabs andserve with a salad and optionally with yoghurt.
