Green Beans in Tomatoes

Good quality canned tomatoes can truly make the difference and par the quality of the fresh beans. Red onions have an unparalleled sweetness that match well with the tomatoes while the garlic and spices give an additional layer of flavour. The Sauce and herbs can also be used in other vegetable braised recipes such as peas, cauliflower, flat runner beans, Bamies etc.

Green Beans in Tomatoes

Ingredients

  • 1.2 kg fresh Green Beans , ends cut and side any side string removed
  • 400 g Diced Tomatoes , canned
  • 2 tbsp Tomato Paste
  • 250 ml Water , warm
  • 2 Red Onions , halved and finely sliced, or Yellow Onions
  • 2 large Cloves Garlic , thinly sliced
  • ¾ tsp Allspice , ground
  • 2 tbsp Fresh Oregano , leaves picked and finely chopped, or 1 tbsp ground dry Oregano
  • 1 tbsp Turmeric
  • 1 tbsp dry Coriander , ground
  • 1 tbsp Black Sesame Seeds , optional
  • 75 ml EVOO , Extra Virgin Olive Oil
  • 2 tsp Sea Salt
  • 1 tsp freshly ground Black Pepper

Instructions

  • We place a large non-stick pot or casserole over medium heat and drizzle the oil. Once it heats up, after about 1’ we add the onions, sauteing for about 3’. Then we add the garlic, and we sauté for further 2’.
  • Add the tomato paste and allow to cook for a minute or so. Then add the tomatoes, all the spices/herbs, season with the salt and pepper and mix well.
  • Add the fresh beans, pour the water, and toss to get well coated. Increase the heat and bring to a boil. Simmer with the lid on for 45’ for the beans to soften but still be a bit crunchy while also aiming for the liquids to be absorbed and a nice sauce to be created. If needed add some more water.
  • Remove from the heat, taste and season if needed. Serve, optionally sprinkling with the black Sesame seeds.
