Bulgur with dried Berries

Bulgur, a staple ingredient that goes so nicely with various meats but also on its own. In this case, it is studded with the dried fruits, pistachios and spices for a fragrant and aromatic finish.

Bulgur with dried Berries

Ingredients

  • 300g Bulgur
  • 150g Dry Berries , assortment
  • 25g Sultanas
  • 75g Pistachios , shelled, toasted
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • 1 Lemon , zested
  • 1 tbsp Aleppo Peppers , ground
  • 1 tbsp Zaatar
  • 1 tbsp Sumac
  • 3 tbsp fresh Parsley , leaves picked and roughly chopped
  • 300ml Water , warm
  • tsp Sea Salt

Instructions

  • Place a medium/large pot or casserole on medium heat and pour the oil. Wait for 2’ to heat-up and then add the bulgur making sure that is well coated with the oil. Sauté it for a few minutes until nicely brown and nutty.
  • Pour the water along with the salt and bring to a boil. Then add the berries and the sultanas, cover with the lid and remove from the heat.
  • 10’ later uncover and add the pistachios, the lemon zest, Aleppo peppers, zaatar, sumac, parsley and toss well. Ready to serve with kebabs!
