In this version I chose to use big ‘Spunta’ potatoes which were boiled and then peeled and cut into chunks.
Furthermore, I used green olives for that extra tanginess as well as fresh chives.

- 15 Green Olives , pitted and roughly chopped
- 3 tablespoons EVOO , Extra Virgin Olive Oil
- 2 tablespoons White Wine Vinegar
- ½ teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
